One of the hardest things for many people who have to or choose to eat gluten free is giving up bread. The good news is there are lots of options to still enjoy bread products! Harcha is a Moroccan skillet bread. It’s most often made for breakfast and drizzled with honey and butter. But this can also be a great accompaniment for savory meals.
French style sandwiches, or tartines, are open faced. You get all the great taste and flavors without all the bread. This sandwich is a play on both styles. I used Greek yogurt in place of mayonnaise in the avocado egg salad to lighten this up a little. And while you may find it has more calories due to eggs and avocado you’ll be getting some great protein and good fats. Remove the egg yolks if you want to lighten it a little more.
