Last night I made my family spaghetti. While spaghetti is by no means bad for you, I’d had a bit of a rough food day and really just needed to eat some vegetables, maybe a little protein.
Spaghetti squash seemed like a great alternative, but I didn’t have one in the house. What did I have? Zucchini!
I cut the zucchini into thin strips.
Then I heated some olive oil and tossed in some garlic. A few minutes later, in went the zucchini and a handful of cherry tomatoes from the garden.
I let it saute for a few minutes, then tossed it with a bit of the spaghetti sauce I’d served to the rest of the family.
Did I miss the regular spaghetti noodles? Not a bit! You won’t either…promise!
