Some days, you just want a cookie. To be honest, that’s pretty much every single day for me. Chocolate chip cookies, in particular, are my diet kryptonite. So generally, I don’t have them in the house. Too much of a temptation.
The truth is, I really love to bake and I’d love to be one of those moms who always has a full cookie jar for my kids, but I know I couldn’t handle it, and honestly, it’s not the healthiest thing for my children.
But, like I said, some days I REALLY NEED A COOKIE. And on those days, these cookies are just the ticket. They are delicious and chocolatey and have a super special secret ingredient. A genius ingredient. A protein packed ingredient. An ingredient you’d never expect in eleventy billion years.
Wait for it…
wait for it…
That’s not a typo. Chickpeas. For real. And you can’t even taste them.
I found this recipe a few years back and have tweaked it a bit by adding whole wheat flour and using less sugar and chocolate chips. Even with those adjustments, the cookies are still moist and delicious, and most importantly, taste decadent. Because when you NEED A COOKIE, you don’t want a cookie that tastes good for you.
Obviously, you need to use your common sense…even though these are a healthier option, they are still a cookie. If you eat the entire batch, it’s not a good thing. Duh. That’s why you should make these when you’ve got lots of people to share them with you.
I’m telling you…make these for your family. Hide the chickpea can deep, deep in the depths of the trash can. They will NEVER, ever know.
I won’t tell if you won’t. Pinkie swear.
