Steak salads are kind of genius. It’s a salad, so it’s on the lighter side, but the steak makes you feel like you’re having a real meal. And steak doesn’t have to be bad for you…it’s all about moderation and the cut you choose. For this grilled steak salad, I used top sirloin, and I prepared it using the water bath method in the Sous Vide Supreme. At the very end, I just gave the steaks a quick spin on the grill to caramelize the outsides and get those pretty grill marks. Voila! Steak perfection! As always, I’ve also included an alternative method using the grill only. Both versions are fabulous.
The combination of grilled steak, perfectly ripe tomatoes, creamy avocado and sweet corn is summer on a plate. Utterly delicious. If you’re a cheese lover, this would be amazing with a little stinky cheese (blue or gorgonzola). Serve it with split whole grain baguettes lightly brushed with garlicky olive oil and grilled for a few minutes and a nice glass of red. On a patio, with good company.
