Chia pudding has been around for awhile, so I thought I’d gather together a bunch of superfoods and put a new spin on it. This is a great little preworkout breakfast or afternoon snack, since it has that little kick of energy from the matcha powder.
Make it the night before and it’ll be all jelled and ready by morning.
By now, we all know about the nutritional powerhouse that is chia — lots of omega-3 fats, protein, and fiber — but matcha tea is also a foodie superhero.
Never had matcha green tea powder? It’s a vibrant green and dissolves easily in hot or cold water. So instead of steeping the tea leaves, you’re actually consuming the entire thing so it’s loaded with antioxidants. It’s also really high in one of my favorite things, the amino acid L-theanine. It’s what gives you that Zen-like feeling after you drink green tea.
Since matcha is consumed whole, you buy it loose, usually in a metal canister. The matcha I used in this recipe comes from Matcha to Go, little single-serve packets of tea that you can bring anywhere to mix into a bottle of water or mug of hot water.
