This tasty salad has been a hit at all the gatherings it has attended! Perfect for a summer barbecue!

Green Salad with Apple, Feta, Pecans and Basalmic Dressing

Prep Time: 20 minutes

Cook Time: 5 minutes

Total Time: 25 minutes

Yield: 8 servings

Green Salad with Apple, Feta, Pecans and Basalmic Dressing

Gather

FOR THE SUGARED PECANS:
1/2 cup Pecan Pieces (walnuts are also tasty!)
2 Tablespoons Granulated Sugar
FOR THE SALAD:
6 ounces, Baby Spinach
1 head Red Leaf Lettuce, Torn
(if I don't have the red lettuce on hand, I add more spinach instead)
1 whole Granny Smith Apple, Cored And Very Thinly Sliced
4 ounces, Crumbled Feta Or Blue Cheese
FOR THE DRESSING:
1/8 cup Red Onion, Finely Chopped
1 1/2 Tablespoons Red Wine Vinegar
1 1/2 Tablespoons Balsamic Vinegar
1/4 cup Olive Oil
1 Tablespoon Granulated Sugar
1/2 clove Galic, Minced
1/8 teaspoons Salt
Dash of Freshly Ground Black Pepper

Step by step

  1. Place nuts in a medium skillet with 2 tablespoons sugar. Cook over medium-high heat until nuts are coated and brown, stirring constantly, about 4 minutes; set aside.
  2. Toss salad greens, apples and cheese.
  3. Combine dressing ingredients in a small jar and shake vigorously. Pour over the salad just before serving.
  4. Sprinkle with sugared nuts.
