Some nights, spending more than 20 minutes preparing dinner is torture. Tonight was one of those nights for me. Both kids were in high red alert whiny mode while simultaneously on a mission to destroy everything in their path.
To be quite honest, it almost became a cereal for dinner and early bedtime night.
Thankfully, I was able to settle them down to the kitchen table while I threw dinner together. The screaming ceased and they only drew on each other, which I consider victory. This Green Olive Chicken took LESS than twenty minutes to prepare and it was so delicious. I ate it as is, the kids ate it with pasta, and without complaint. I was a little worried about the green olives, but they didn’t care/notice. Which is awesome, because I love green olives and am thrilled I can throw them into family dishes!
If you’re not sure about the green olives, they really only add a great brininess to the dish – they’re not overpowering. You could easily sub a different olive – kalamata, for instance. Or, if you’re really anti-olive (say it ain’t so!) you could leave them out entirely and this would still be a really wonderful dish.
Serve it up with whole wheat pasta, like I did, with some quinoa – or, even just a nice crusty loaf of bread. You’re in and out of the kitchen in twenty minutes with a healthy dinner and only one pan to clean up …and you should totally pass that duty on to someone else!
