The season of stuffing is upon us.
I’ll tell you right now that I love stuffing. I would marry stuffing if I could. It’s my favorite part of any Thanksgiving dinner and I would gladly pass on the turkey and the mashed potatoes. But I must MUST have stuffing.
Since it is November and everything, Thanksgiving is starting to flood my psyche. You see, I concentrate on one holiday at a time. And for the month of November, I obsess on Thanksgiving. Today, the stuffing craving reached a fever pitch and I knew I had to do something to quell the pangs.
Slight problem though…I’m detoxing and not eating grains. No bread, not even a kernel of quinoa.
(does quinoa have kernels?)
A pillage of my kitchen revealed three acorn squash that needed to be used. So I had a vessel. From the depths of my fridge, celery and sage. An onion, dried cranberries and pecans from the pantry. And I snatched an apple from the box I picked up the other day for applesauce.
There you have it. All the flavors, no bread or grain involved. Grain Free Stuffed Acorn Squash, for the faux stuffing win!
I ate this as a very filling main dish. You could add a nice green salad to round thing out if you’re famished. Or, this could easily be made into eight servings for a side dish.
Thanksgiving is upon us! Revel in it and remember, you can always get the flavors without sacrificing nutrition!
