Most obnoxious sentence in the world alert.
I can’t get enough of this garlicky kale salad.
When I see statuses like this on Facebook, I want to reach through the computer and virtually slap somebody.
But I can truthfully say, I have made this recipe at least every other day for the last month and figured it was time to share. It’s super healthy, hearty and the flavors are perfect.
The salad itself is a Whole Foods knockoff. It’s my favorite go-to if I’m out and about and starving. But it’s not cheap..and it’s KALE. I mean, it’s tough to shell out a fortune for kale, you know? So I did a little research and made my own.
The Whole Foods version has the kale a little more intact. I prefer mine chopped fine, almost like a coleslaw…hippie coleslaw (hah). If you’re not familiar with some of the ingredients (the nutritional yeast, tahini and the aminos aren’t run of the mill staples), this is the right time to introduce them to your pantry. I find my nutritional yeast in the bulk section of my supermarket. Tahini is usually found by the natural nut butters. And aminos are similar in flavor to soy sauce – but I usually find them in the health food section near the apple cider vinegar.
So, again, my deepest apologies for the most annoying sentence in the world…but it’s true. Give this salad a try and I bet you’ll agree!
