Grilling season is here! I’ve been craving Asian flavors lately – Vietnamese, to be exact, and wanted to see if I could come up with something rich in flavor but still healthy. I picked up a flat iron steak yesterday at the market – there was a great sale. While I was there, I grabbed some lemongrass in a tube (yes, it exists and it is awesome – it’s in the produce department by the fresh herbs) and some wooden skewers.
And that folks, is how Garlic and Lemongrass Beef Skewers came to be! They’re delicious, and apart from a little planning to make sure you get the meat into the marinade, they’re super simple and grill up in a snap. I used the flat iron steak, but this would also be perfect with flank steak. Look for lean cuts and make sure you cut AGAINST the grain. If you cut with the grain, the meat will be awful and tough.
Serve these Garlic and Lemongrass Beef Skewers with Coconut Lime Rice, with some rice noodles or over a green salad with cilantro and lime wedges. Yum. It’s a perfect dinner for a warm day.
