Bok choy is one of those vegetables I rarely pick up when I’m out shopping.
Don’t get me wrong, I love it. I am usually reminded of this love when I have Chinese takeout and get the ‘mixed vegetable’ – which is usually carrots, broccoli and bok choy.
Then I say to myself ‘Self? We need to buy bok choy next time we’re at the market.’
This time, the bok choy came in my extra ‘Asian’ bundle from Bountiful Baskets. I prepared it simply…a quick stir fry with some sesame oil, garlic and ginger.
It’s simple, but it’s so, so good. The flavors are intense and delicious and bok choy is super healthy – it is high in calcium, fiber, iron, manganese, phosphorus, postassium, vitamins A & B6.
I served mine up alongside a little rotisserie chicken. It was a perfect, light dinner and I think next time I’m grocery shopping, I’ll remember the bok choy!
