My sister in law makes the best chicken skewers in the world! My version of her dish is a marrying of a Filipino style marinade on the chicken and a classic Greek style tzatziki sauce for dipping. Allowing the marinade to blend overnight, the chicken becomes so tender and flavorful when you grill it the next day. This recipe works well with chicken, beef or pork! It can be used as an appetizer or as dinner, served with a salad (I did mine with a Farro salad). It is perfect to take to a picnic or family barbecue, where it can be served hot or cold.
