Featured: Skinny Mom’s California Roll Wraps

I am so thrilled to be doing a recipe exchange with our awesome peeps over at Skinny Mom…especially since this recipe looks ah-freaking-mazing. I adore California rolls but am a bit intimidated to try to roll sushi on my own. So making California rolls into a wrap? GENIUS.

All the flavors that make California rolls great are present in this wrap – but healthier. You’ve got brown rice and healthy fats from avocade. Crisp cucumber. The usual imitation crab meat (of course, you could sub real crab meat if you wanted!). All enveloped in a hearty whole wheat wrap – it’s a portable, healthy meal with Asian flair!

Serve them up with a little low sodium soy sauce…mixed with some wasabi if you’re feeling sassy. These wraps are perfect for a simple weeknight dinner, a quick lunch, or you could even serve them at a party. So very versatile!

Featured Recipe: Skinny Mom’s California Roll Wraps

Prep Time: 10 minutes

Total Time: 10 minutes


8 whole wheat tortilla wraps
8 ounces imitation crab meat
½ cup tomato, diced
½ cup cucumber, diced
1 avocado, diced
2 cups cooked brown rice
3 tsp sesame seeds
low sodium soy sauce

Step by Step

  1. In a small bowl, mix cooked brown rice with sesame seeds.
  2. Lay one tortilla on a flat surface and place a small amount of rice, 1 ounce of imitation crab meat, and top with a small amount of tomatoes, cucumber, and avocado. Fold sides of tortilla and place index and thumb on sides and roll tortilla tightly.
  3. Repeat with other tortillas and serve each tortilla with reduced sodium soy sauce.
