We love featuring reader recipes (yes! you can submit your recipe too!). This particular recipe caught my eye when Keasha posted pictures of her dinner over on our Shrinking Jeans Challenge support page. Everybody went wild and wanted the recipe.

Salmon cakes are a great way to get healthy fish into your diet. Canned salmon is relatively inexpensive and has all the nutrition of fresh. Plus, it’s just easier to work with when making things like salmon cakes. These delicious patties are awesome on a whole wheat bun with some light tartar sauce or just as they are, served on a bed of lettuce. If you’ve got a grill press, it’s a super easy way to quickly cook these babies, but a regular old non-stick skillet works great too.
I had all the ingredients for this recipe in my pantry and my crisper. You’ve got to love pantry cooking – perfect for those nights when you are exhausted but don’t want to order takeout. Everything in this recipe is an easy staple to keep on hand!
