I LOVE vegetables, and anything with sautéed onions is a winner in my book. I am always looking for creative ways to serve vegetables, and since my kids’ palates are finally becoming more advanced, it’s time to move beyond steam broccoli and roasted asparagus. My 5 year old daughter actually requests sautéed onions with zucchini and squash! A mother’s dream come true! This bright and colorful Mexican Stir Fry has been become a weekly visitor at our table.
A few weeks ago we went out for Mexican, and in an effort to find something a little healthier on the menu, I ordered a Mexican stir fry! It was a delicious mixture of bell peppers, squashes, onions, and a little spicy kick – very delicious, and totally doable at home. Make it for lunch or dinner, and to make a meal of it, you could add some some chicken breasts and serve it with corn tortillas. A completely perfect meal!
This dish does include a jalapeño pepper, but if you remove all the seeds, it only lends flavor and not heat. If you’d like a little heat, then leave some or all of the seeds!
