This Curried Carrot Soup with Ginger recipe is an ode to the Office Potluck where we share the best recipes given to us by co-workers after a particularly good lunch. You know, those dishes that warrant emails asking for the recipe because it was so good and then printing and saving those recipes in your recipe box.
Nowadays, it isn’t a physical box but instead it is a digital folder where we keep only the recipes that we know we will use again. A former co-worker (thanks Rebecca) shared this one with me over ten years ago and it is one those recipes I have kept and made different versions of depending on what ingredients I have on hand.
Prompted by an overabundance of carrots in my fridge and a cold wet, spring day, I went in search of this recipe. The basic ingredients are carrots, of course, curry, onions and fresh ginger. The other spices and vegetables have changed over the years, and the one I am sharing today is my current favorite.
