Embarrassing confession time. We have frozen fish sticks in our freezer. At all times. My husband loves this sandwich I make…it’s really complicated: toasted white bread, cheddar cheese, ketcup, mayo and fish sticks.
Did I mention the bread is heavily buttered before toasting?
Ugh. It’s good. But terrible for you. I rarely partake in the fishstick sandwich but it’s entirely my fault for introducing them to him. I learned to make them while I was a poor student living abroad in England. Except I put some coleslaw on mine and drank it with a beer. Then I wondered why I came home fifteen pounds heavier!
Fish sticks, store bought, are pretty gross, actually. The fish is so processed, you’re almost completely missing out on the goodness – and the taste – of the fish itself. I set out to create a healthier version and I do believe I’ve succeeded. And I even came up with a lighter tartar sauce. Made from Greek yogurt. True story. It’s delicious and doesn’t taste healthified at all. Give it a try!
Adjust the sriracha hot sauce (aka Rooster sauce) to your liking. You could also use your favorite hot sauce. Cod works great in this recipe, but any firm white fish, like halibut, works as well.
Serve these up with some oven fries and a big green salad and you’ll have one happy family!
