This recipe started out as a black bean burger, but quickly morphed into quinoa patties. Why? Because I love quinoa, that’s why. There are still black beans in this recipe, but they’re not the star.
Oh no. It’s quinoa. Definitely quinoa.
Did you know that when you lightly panfry quinoa, it becomes crispy? I had no idea, and what a mouthwatering and happy surprise! These patties are soft in the middle and crunchy on the outside. You’d never know they’re good for you. And they are SO good for you. Protein and fiber packed. Meatless.
These are so good, I ate them for dinner last night and lunch today. The patty mixture held up beautifully overnight, so this is a great make ahead meal – just form the patties and fry them – they’re ready in under ten minutes.
I ate mine over greens with some gorgeous avocado, lowfat cheddar and extra salsa on top. Delish.
