I love edamame. My kids love edamame. Usually, I just boil it up with a little salt and call it good. But I ran across another idea the other day and had to try it – crispy edamame, baked in the oven.
Being totally indecisive, I went ahead and tried it with two different spice mixtures…both of which, to my delight, turned out fabulous. First, I went with some Asian flavors – a little sesame oil, some Chinese five spice. Oh man, these smelled amazing baking in the oven. Mouthwatering.
Next, I mixed up a little Tex Mex spice – some chili powder, cumin and garlic powder. These have a great taco flavor – a little spicy but not overwhelming.
My taste tester today was my 16 month old. I didn’t know if she’d like all the different spices, but she gobbled them up and asked for more. Which I happily obliged, because hello! Edamame is chock full of good stuff. Lots of protein and fiber, and a bunch of vitamin C. It’s a super snack!
When you make these (and you totally should make these), just know that they don’t keep that well. If you don’t eat them all within a few hours, they get a little soggy. You can remedy this by throwing them back in the oven to crisp up – though I seriously doubt you’ll have any problem eating these quickly. So make sure you have someone to share them with!
