I have a freezer full of fruit, ready to go for smoothies. It’s the usual — blueberries, strawberries, acai pulp, mango — but there’s another fruit that lives year round in my freezer that I hadn’t yet used in a smoothie. And I was determined to use cranberries in a smoothie because I love them so much.
I buy a bunch of bags this time of year and toss ‘em in the back of the freezer to use throughout the year in muffins, quick breads, salsas and now smoothies.
Usually I add frozen fruit to smoothies to thicken them and sweeten them, but cranberries aren’t sweet, so the challenge was on!
I wanted to replicate one of my favorite cranberry relish recipes, so I added some crystallized ginger chunks and orange zest.. And to play up the tartness I used pomegranate kefir as the base. And the amazing Cranberry Ginger Smoothie was born. So delicious!
