I grew up eating authentic Thai food, so I’m always trying to recreate some of the dishes my grandmother made when I was a child. This is very close to a red curry dish that was one of my favorites! The recipe came together in about 35 minutes, and we ate ALL of it. My son had thirds, and my daughter had seconds, which is amazing considering she hardly ever finishes her first serving! We served it over Jasmine rice with a side of steamed broccoli, but it would be perfect as a simple soup, or even tossed with linguine. It’s perfect for a quick weeknight dinner, but suitable for serving when you have guest over. I would start out with 2 tablespoons of curry if you’re not big on spice, but I put in 3 tablespoons and my son had me add more to his because he wanted more kick. It’s totally customizable. You could add onions, carrots, or even bok choy or kale. Lots of flexibility with this dish!
It will definitely be on our regular monthly rotation since we hardly ever make it to the city for really good Thai food.
