There’s an older Saturday Night Live Skit. Dana Carvey is in it, along with Phil Hartman and Sigourney Weaver. Carvey is a pop singer, Hartman and Weaver, music execs.
Carvey, trying to write a hit, sits at the piano. He starts singing. Hesitantly at first, and then, with passion.

This dish, it’s not chopped broccoli. Instead, chopped brussels sprouts. I’ve been chopping mine up lately, sauteeing them or using them raw in salads. It’s a great way to speed up the cooking process. This particular recipes, with the chopped sprouts intermingled with crispy, salty pancetta and sweet tangy balsamic is a perfect way to get a brussels sprouts hater to convert. There’s just enough pancetta to add flavor without a ton of fat.
Serve these up as a side to pretty much anything! I served them in lieu of cabbage on St. Patrick’s Day. You could also toss this mixture with hot pasta for a quick and healthy dinner!
