I love a good cookie bar. Why? Well besides the obvious fact that they’re in the cookie family, I’m also a lazy baker. I hate having to babysit tray after tray of traditional cookies.
This recipe takes my baking laziness to the next level. Throw everything in the mixer at once and let ‘er rip. Throw it in the pan. Pat it down. Bake. Done.
These Chocolate Coconut Oatmeal Bars have several of my favorite flavors, all packed into one neat (well, sometimes crumbly) package…chocolate. Almond. Coconut. It’s all sweetened with a small amount of brown sugar and some maple syrup. And there’s no butter to be found in this recipe. Coconut oil and almond butter add the necessary fat.
Make sure you allow these to cool before you serve, and store any leftovers in an airtight container or they’ll dry out pretty fast.
One more thing? Since they’re fairly low in sugar and full of oat-y goodness, this is a perfectly acceptable breakfast treat now and then. I gave my daughter one with a side of yogurt and fruit. She thought she was getting away with something.
