Asparagus is nearly in season here in Washington State, and I am so excited. It’s one of my favorites. I love it steamed, roasted, grilled. Heck, I’ll even eat it raw. I’m already finding great deals in the grocery store on this delicious vegetable!
Besides being delicious, asparagus is a nutritional powerhouse. It is a good source of protein and fiber and is low in carbohydrates. It is loaded with potassium, folic acid, vitamins A, C and K. Asparagus also has anti-inflammatory properties and is a source of anti-oxidants.
When you are buying asparagus, choose straight, firm stalks with tight tips.
This Chinese Chicken & Asparagus Salad recipe is one that I was served at a luncheon a few years ago and it was amazing. We all asked for the recipe. I love the unexpected use of asparagus in this recipe, and the different textures of the cooked chicken and asparagus contrasted with the crispness of the raw peppers.
You can serve this straight away, or make it ahead of time and serve it chilled from the fridge. Either way, it’s delicious and perfect for entertaining. If you would like to stretch the recipe further, add some cooked whole wheat spaghetti (this will change the nutrition information, of course).
