Do you ever just sit and stare at your fridge or pantry and wonder, “what can I make from all of this?” I was looking for a little Mediterranian inspiration to cook my chicken thighs and here is what I came up with from my pantry, Chicken with Israeli Couscous. The chicken and Israeli couscous mixed with lots of vegetables and comforting spices provide a great combination of flavors and a warm, easy comfort dish. Perfect for a weeknight meal, and if you make enough, it is a terrific leftover for lunch! This is one of those dishes that you can easily make your own by using whatever veggies you might have in the fridge. I had some brussel sprouts, red bell peppers , frozen peas, onion and garlic.
I love Israeli couscous because it has a nutty, chewy texture and it really absorbs flavors, a great pairing with the chicken thighs and veggies. You can put it all together in one big skillet and voila, dinner is ready!
