A touch spicy, this delicious soup satisfies your craving for Mexcian food without all the calories. Plus, if you’re at home, you don’t have to contend with the basket of chips. You know what I’m talking about.
The calorie count is a little high on this one, but the serving is HUGE. So you could easily divide this recipe up into 10 servings. But honestly, 400 calories for a main dish is pretty good. Especially in place of a huge plate of enchiladas or a deep fried chimichanga.
Serve this up with lots of toppings (I especially love it with lime and cilantro) and have yourself a little fiesta.
