I’m about a week into my cleanse with Jodi at EatCleanHealth and on Friday night, I hit a food wall. I wanted something bad for me. I was CRAVING Mexican…it was all I could do to not go face first into a big plate of nachos.
Thankfully, I remembered a dish that Christy mentioned she’d made during HER cleanse and decided I needed to give it a whirl – and the Chicken Fajita Toss was born. Basically, it’s like fajita filling. So you could absolutely serve it wrapped in tortillas. But since I’m not doing grains at the moment, I enjoyed this super satisfying dish topped with some sliced avocado, extra cilantro and some lime squeezed over the top.
Oh my actual Lord. I can’t even tell you how much this squelched my Mexican food craving. Whew! And it was SO good, I made it again on Saturday night!
