When I set out to create a chop salad, I was trying to recreate a really yummy salad I had last weekend at brunch. Then I changed a few things. And a few more.
Basically, this salad resembles last weekend’s salad NOT AT ALL. The only similarity is the chickpeas.
Happily, this is just as delicious. Maybe even better. And it couldn’t be simpler. Spend a little time chopping and you’re good to go! This recipe serves four – the servings are a good size, but if you’re looking to bulk it up, simply chop up a bunch of romaine and add it to the mix.
Another thing – I used plain chickpeas, but if you’re feeling ambitious, try it with roasted chickpeas! It adds a whole new dimesion of texture. They’re like little mini healthy croutons!
Finally, you can easily make this vegetarian – just lose the chicken and double the chickpeas. Easy (chick) peasy!
