My favorite ethnic cuisine is Italian. When I see a delicious Italian recipe that includes pasta or bread, the wheels in my head start turning to try to come up with a lower carb version. Don’t get me wrong, I love bread and pasta, but at my age I can no longer afford to have bread and pasta more than a couple time per week.
This chicken cacciatore meets those criteria and on top of that is super simple to prepare. It is also very versatile. For example, I don’t care for mushrooms so I used yellow squash in this recipe but you could easily substitute fresh mushrooms. You could also use fresh herbs instead of dried. You could use tomato paste instead of sauce for a richer flavor. I also cooked some spaghetti squash to go with this dish instead of regular spaghetti. I even tried it with a cauliflower mash instead of mashed potatoes. But if you really want to go all out, serve with spaghetti, garden salad and garlic bread with a nice Chianti.
