I really love spaghetti squash but have always prepared it one way…like noodles. Basically I make spaghetti sauce and serve it to my family with regular pasta, while I happily nosh away at my spaghetti squash.
But I wanted more. Other ways to enjoy this beloved gourd. So I improvised. Same general flavor profile as my marinara topped spaghetti squash – but in a casserole form.
Man, I dig casseroles.
This spaghetti squash casserole is flavorful and you get a pretty large portion for under 250 calories. I like mine topped with some chopped fresh tomatoes and freshly grated parmesan. One tip: drain the tomatoes REALLY well and try to get a little moisture out of the spaghetti squash before mixing all the ingredients together. This will help your casserole to set up better!
