In my ongoing efforts to heal my gut, I’m eschewing a few food categories, so I decided to get creative with some items that were hanging out in my fridge.
Steamed broccoli is hella boring, and since butter is off limits right now, I wondered what I could use to jazz it up. That’s when I spied a jar of tahini and a tub of red miso. Come here, you tasty friends! Annie’s Goddess dressing is one of my favorites, and the combination of miso paste and tahini kind of approximates its flavor.
I added a little brightness with lemon juice and zest, and a few grinds of pepper and thinned it out a bit with some water to make a sauce. You could thin it with even more water and make a great salad dressing with it, too. You might find that there’s too much sauce for the broccoli — just save it for later to use on any other vegetable. I served this with a salmon fillet and roasted fingerling potatoes and the sauce played nicely with those foods, too.
