Do you love a good mash-up? I have always loved apple crisp with all the chewy, yummy, crumbly goodness on top. Another favorite is oatmeal with all the works on it. This recipe is my desire to put the two together in one meal, my apple mash-up if you will. Stuffing the cored apples with oats, toasted nuts, coconut and dried fruit using pure maple syrup as a sweetener is my way of making apple crisp for breakfast. It is warm, naturally sweet and healthy. I have left out the butter and brown sugar of traditional recipes allowing the apple flavor to shine through and the stuffing to add texture and fiber to the dish. Of course, if you wanted to make this dish in the evening as a dessert you can top it with a lowfat whipped cream or frozen yogurt. Your kitchen will smell fantastic as it bakes – always a bonus!
This is a great way to start the day, especially on those cold, dark wintry mornings! With the longer baking time I tend to do this on weekend mornings when you can relax and enjoy as your kitchen fills with delicious aromas of baked apples.
