We live on a small ranch and have 3 laying hens, and those ladies take their jobs very seriously! So we have lots of eggs – at least 2 everyday – and I’m always looking for yummy ways to prepare them. As I dug through the fridge tonight, it looked like a Thanksgiving graveyard on those shelves, but amidst the inedible leftovers, I pulled together some ingredients to make this amazing Blue Cheese, Apple, and Pancetta Omelette. YUM-O!
Did you know that Omelette had 2 Ts AND 3 Es? I didn’t. Which means I’ve been spelling it wrong for a long time……
But I digress. This omelette comes together in a snap and is loaded with rich flavor – savory and sweet. Perfect for a fancy brunch for guests, or a quick weeknight dinner. If you don’t have pancetta, regular bacon will do just fine.
Now I’m off to clean out the fridge and get rid of the remnants of Thanksgiving. Don’t be jealous!
