Looking for an easy, colorful, low fat, protein rich, high fiber, high antioxidant salad that makes a great main dish or side? You can’t go wrong with a black bean and corn salad. The main ingredients are usually black beans, corn and chopped tomatoes. It can be as simple as my no-brainer recipe of 1 drained can of black beans, 1 can of drained corn and 1 can of Ro-tel diced tomatoes, or you can try this zippy combo that pumps up the flavor. If you want to really kick things up, use a couple of diced jalapenos instead of the canned chilies. This also can be used as a super chunky salsa and is great over a grilled chicken breast.
