I won’t be that person who tries to convince you that this grilled portobello mushroom tastes JUST LIKE STEAK.
Because I’m not stupid and neither are you. It’s a mushroom. But I will say this:
It’s a delicious, steak-like mushroom. Okay? Does that work?
Here’s what: when you grill portobello mushrooms, they develop this incredible umami flavor. It’s rich and floods your senses and almost makes up for the fact that it’s not a big old steak. Plus, unlike steak, you could eat one of these at every meal, guilt free.
I marinated these portobello mushrooms in balsamic vinegar and horseradish. (Don’t you just love horseradish? I sure do. I don’t eat it nearly enough.) The horseradish does a lot to bring out the meaty tendencies of the mushroom.
So really, if you want to make believe these are steak, that’s cool with me. Serve them with some fresh thyme leaves and goat cheese if you’re feeling fancy. If you’re not feeling fancy? Throw them in a burger and go to town with toppings…avocado, red onion, some chipotle mayo, perhaps? Whatever floats your boat.
