When my daughter was in preschool, they had an “all about me” assignment. She was to include numerous facts about herself on a homemade poster and bring it to school. One question was “What are your favorite foods?” Her top three? 1. Orange Chicken 2. Broccoli 3. Ice Cream. (She’s wasn’t your typical 4-year-old!) Though her “Number 1” has changed throughout the past years, orange chicken has always ranked within the top five. Considering traditional orange chicken clocks in around 500 calories per serving, I was challenged to find a healthier option while satisfying her craving for the real deal. I obtained a base recipe from a friend and have tweaked it to our liking. This is a go-to, easy-peasy meal that is a hit with the whole family!
