I’m Mexican American. We eat Mexican/Spanish/Latin/Tex-Mex food a lot of the days of the week and well, if I’m not careful
as in I shovel the food in too quickly or take more than a typical serving size, my jeans will quickly tell me that I am over-indulging and heading in the wrong direction.
Enter this gem of a recipe.
A healthy, baked- not fried– burrito.
I wanted a burrito tonight for dinner. I wanted it to be good for me. I wanted it to be tasty. I did a little of this and a little of that, crossed my fingers, did a little dance jig, and hoped for an end result that would please my healthy-seeking palate.
I succeeded and then some. My daughter and son begged for seconds. My MIL, who just so happens to be from Toluca, Mexico, and is quick to judge my cooking, gave it her blessing. Everyone asked for me to make this again. We have a few baked burritos leftover from tonight and one of them has my name written all over it for lunch tomorrow. Enjoy!
