Also? I love bean dip…any kind. Hummus? Black bean dip? All good in my book.
My Bountiful Basket had a big old eggplant in it this week and the first thing I thought was baba ganoush! Then I realized my hummus/bean dip loving toddler might not eat it…but she would definitely eat it mixed with beans. And so, this recipe was born.
The baba ganoush bean dip is packed full of yummy Middle Eastern/Mediterranean flavors – and it’s super healthy. Serve it up with sliced vegetables for dipping, or some pita chips. It’d also make a wonderful wrap or sandwich spread.
I used butter beans because I had them on hand, but this recipe would be outstanding with garbanzo, cannellini or great northern beans. And one last thing? Roast the garlic, unless you don’t have to be around anyone for 3-4 days. Trust me. I’ve tried it with raw garlic and needed to be in solitary for a while. I could barely stand myself.
