When a dear friend of mine asked that I bring two appetizers for her birthday celebration down at her favorite beach cabin, I had to come up with something special. There would be a group of 12-15 “foodies” gathering for some great food, craft cocktails and much laughter. What I came up with were easy, yummy and healthy versions of old classics. Instead of a typical guacamole, I made a simple, but tasty bowl of White Truffle Avocado Spread. This is a riff on an appetizer I had with my sisters in a San Diego café. Since I don’t know exactly how they made their version, I guessed at the ingredients and experimented until I found the right combination of flavors. For only having 6 ingredients it tastes very luxurious! You won’t believe what a lovely flavor comes from this combination.
As we know, avocadoes are a great source of protein and the good kind of fat that actually helps with cholesterol and heart health. The prosciutto is baked and the oils drained off to make a great, crunchy topping for this spread. So go ahead and indulge, it’s good for you!
