If you’re doing brunch for Easter, you’re going to want to try out this gem of a recipe. Why is this crustless quiche a must bake?
- It’s light and healthy. Each serving is well under 200 calories.
- It’s delicious…no bland eggs here. Asparagus and pancetta are the stars, but this quiche is also flavored with green onions and a bit of Parmesan.
- It is super easy AND can be made ahead and reheated. I like to make mine the night before, cool slightly, then cover with foil and refrigerate. When you’re ready to serve, simply reheat in a 350F oven for about 20 minutes!
Obviously, this can be enjoyed any day for breakfast – or lunch. Or dinner. Asparagus is just coming into season and is so wonderfully fresh and vibrant right now. And pancetta? Well, it’s basically bacon. So there’s that. Of course, if you can’t find pancetta, you could totally use regular bacon or turkey bacon in this crustless quiche and it’d still be scrumptious. And if you’re of the vegetarian persuasion, you can just leave the pancetta out – simply saute the asparagus in a bit of olive oil instead.
