Good golly, I love this artichoke quinoa salad. It’s just a perfect meal in a bowl. Vegetables, healthy fat, protein and fiber, all mixed up together with a delicious lemon basil dressing.
Hand to God, this is probably going to be my go-to summer lunch obsession.
Now, about the lemon olive oil…if you can get a hold of some, do it! Both Christy and I are obsessed with the Meyer Lemon Olive Oil from Sedona Olive Oil Company. Unfortunately, at this time, they don’t ship. But there are lots of other lemon olive oils out there that are amazing. It’s a great salad dressing base. I also drizzle it over fish right before I bake it. YUM.
If you can’t get the lemon olive oil, just microplane a little lemon rind into the dressing right before you blend. That’ll do just fine.
With the veggies, as I always say, use what’s in your fridge. Cucumber would be wonderful, or some blanched green beans. Vegetables are all you can eat, in my book, so go to town and load this baby up!
Whip this artichoke quinoa salad up for a light and satisfying weeknight dinner or keep a bowl in your fridge for a quic and healthy lunch. It also works great as a side and will serve about eight that way!
