What’s my favorite Thanksgiving dish, you ask. Stuffing. Oh my goodness, I adore it! I will forgo everything else – mashed potatoes, sweet potatoes, even the TURKEY. But I must have stuffing. With gravy.
Stuffing is notoriously bad for you. Lots of butter. So basically it’s butter and bread with a few vegetables. Delicious, yes, but a gut bomb. And since I love it so, and absolutely refuse to pass it up on turkey day, I decided I needed to lighten it up.
I cut most of the butter, used whole grain baguette (check the bakery section of your local supermarket) and added lots of fruit and veggies. The cranberries and apples are nice and sweet and are amazing combined with the salty/savory of the of the dish.
It’s so good and amazingly, pretty darn good for you!
And one last thing…I think we should make stuffing year round. It’s a very underutilized side dish. TEAM STUFFING!
