If you hang out on Pinterest at all, you’ve probably seen the two or three ingredient ice cream recipes. I’m a total skeptic, especially when it comes to ice cream and it’s imitators.
On the other hand, I have a total problem with ice cream and can’t even have it in the house…primarily because of the food debauchery that took place over the holiday weekend. Last night I was craving it HARD. As luck would have it, I had a ton of frozen bananas in the deep freeze as I’d had a whole bunch go prematurely brown last week. (Fist pump).
I looked up a basic recipe and it seemed simple enough. Still I was skeptical that it would turn out well.
I used my Vitamix, but I think this recipe would work just fine with any high speed blender. If your bananas are in smaller pieces, it will probably work even better! My ‘soft serve’ turned out silky smooth.
And you’re probably wondering how it tasted? Hot diggity, it was good. No sugar, no dairy, no gluten and totally scrumptious. It completely quelled my craving for ice cream, without sabotaging my detox. The addition of the almonds and coconut was totally a last minute thing, and SO good! Of course, you could top with whatever you fancy…fruit? Mini chocolate chips? Or you can just devour it plain.
This recipe obviously requires a little pre planning, so here’s my suggestion. Always keep chunks of frozen bananas ready. You never know when you’ll have an ice cream itch that needs scratching!
