This summer has been so busy at our house. Okay, so by busy I mean we pretty much spend all day swimming or lazing around in the hammock reading, or maybe taking a hike or puttering around in our vegetable garden. All important stuff, right? So with all of this busy-ness, sometimes I forget to take something out for dinner, and it’s 6:30 and the kids are staaaarrrrrrrrving, and I have to pull something out of…..well you know. This 10-Minute Tomato Soup was born in one of those desperate moments. My children were about to DIE from starvation and I had nothing, nada, and no ideas. So I asked them what they wanted and my daughter said tomato soup and my son said grilled cheese! BAM. I rifled through my pantry, sent the kids out to pick some veggies, and this soup was on the table 10 minutes later. No lie. And it’s WAAAAAY better for you than that condensed soup that rhymes with gambles.
I love this soup because it’s so customizable. My version is vegan, but you could use real milk. Add in some parmesan. Or not. You could also use different veggies, and the great thing is if the kids don’t know there in there, they won’t know there in there. *wink wink*
I hope you make this soup really soon. Only you should probably plan it out so your kids aren’t hopping around the kitchen grasping their concave bellies because they haven’t eaten in 3 hours. *gasp*
